If you like raw fish and you have not tried sweet shrimp nigiri…then you are totally missing out! It has great texture. (Soft, smooth, and chewy) It has great taste. (the perfect amount of sweeet!) It has great presentation. (Raw shrimp settled on sushi rice, deep fried shrimp heads drizzled in eel sauce, sitting on a bed of lettuce and shredded carrots) Exquisite! and Yummy! This is my favorite light dishes next to Yellowtail Carpaccio, which by the way is superb. I will have to do that video for ya’ll in the near future. But back to the present, this is a must have dish if you like sushi and have not tried it yet. Forget going to the sushi bar for this one. Usually, going to the market to buy sushi grade fish may be costly because it is only sold by the fillet, which is a lot for one person. Spot Prawns or Botan Shrimp on the other hand, can be bought by each piece. Alaskan Pink Shrimp will also do just fine. Just go to the local Asian supermarket and pick out a few good ones. Lets begin!
Sushi Video : How to make Sweet Shrimp Nigiri recipe
First you will need:
- Sushi Rice (A small bowl of sushi rice is more than enough)
- 2 Spot Prawns
- Small amount of flour
- Cooking Oil.
- Eel Sauce (Not necessary if you don’t have it on hand)
- 2 small pieces of lettuce for garnish
- Small amount of shredded carrots for garnish
Lets make it happen!
First, twist off the heads of the spot prawns. This may require a bit of force. Don’t worry, you’re strong enough, you can do it.
Place a pot of oil, enough to cover the prawns, under 350 degrees heat or before boiling point. Let it heat up for a few minutes then cover the prawn heads with flour and gently drop it in the oil for about 2 minutes. Next, remove the shell without removing the tail, for presentation. Slice the bottom half of the shrimp in half without slicing through the other side. Just enough to open up the meat. Grab a small palm full of rice and shape it into a 3/4 inch by 3/4 inch by 1 3/4 inch rectangle. Make 2 of these. Then set the shrimps on top of the rice. Apply gentle yet firm pressure to bond the shrimp and rice without flattening the shape of the rice. Garnish a plate with the lettuce and carrots then set the shrimp nigiri on top. Next, place set the fried prawn heads diagonally resting on the shrimp nigiri. The presentation should look like a whole shrimp with the heads sticking diagonally upwards like the picture above.
Serve with ginger, wasabi and soy sauce.
