Between you and your sushi is a wide variety of sauces to choose from. Some sauces are already placed on by the sushi chef and other sauces can be added on the side as a dipping sauce. Every Sushi bar has at least four sauces behind the counter ready to spread on its sushi counter part. The four that I speak of is the spicy mayo, eel sauce, mayo, and of course the soy sauce. Most often, sushi bars also carry a hot sauce, ponzu sauce, and a variety of mixed house special sauces. Without the proper sauce, sushi as we know it would not be the same.

yup real yuzu, a variety of citrus, some vinegar, soy sauce and bonnito flakes, let it set for about a day and strain it

yes you can buy them at japanese markets or even korean markets. maybe asian market. you can also buy them online.

go to a japanese market. Everything you will need will be there.. for first time you will need short- medium grain rice, rice viengar and mix w/ sugar and salt, rice cooker, rolling mat, sesame seeds if you want, latex free gloves will be easy to spread rice after putting a bit of oil on them, and the rest is whatever u want inside

Some sauces are made and some are bought packaged. The orange one is spicy sauce. It can be made by combining mayo and hot sauce. The preference is up to you how spicy you want it. Start off with 1/4 hot sauce to 1 mayo. As for the green you would have to be more specific. If you told me what it taste like or what it went on maybe i can figure it out and tell you how to make it.
