TY very much for taking the time to share these vids! I have accomplished my first inside-out California roll last evening (a bit messy but had a ball). I am in love with me new found skills. Will acquire precision in repetition. How long have you been making sushi professionally? Maki-Zen

Wow. Do you eat it all after? I am so jealous. So I can get this at a regular Asian store? I live in a small town and things like rice oil and snow crab meat are hard to come by.

theres a couple of things you can do, one is keep a bowl of water next to do, and dip both hands into the water clap the excess water out and grab your rice to spread it. if it starts to stick again use more water. at first it might be a hassle but it'll be easy to get use to. second the easy way for making sushi at home would be to buy latex free gloves. dab a little bit of oil on them and rub your hands together and wah lah no more sticking rice.
