If you don't pour too much vinegar at once it should be fine.

This hangiri I bought today has small cracks and it hasn't been put to use yet. All I did was rinse the whole thing with water and left it to dry thoroughly. The material is spruce and it has copper bands that's been nailed down with a nailgun. Should I submerge it in water to expand the wood rather than wiping it down with a wet towel?

The rice should be cooked properly first, too much water and it will be mushy. Second, its suppose to be sticky. Keeping the hangari and wooden spoon wet at all times will keep it from sticking to the hangari and spoon. Third, you cannot stir, you must move the spoon in a slicing motion to prevent clumping and mushing the rice. Make sure you put enough vinegar. That should be about it.

I tried this but for some reason the rice becomes way too sticky after being cooked, to the extent that when I try to slice the rice, the wooden rice spoon will get stuck in a giant clump of rice.

Any idea how to solve this issue?

Well, I think the solution to the problem would be how to apply the rice so that the rice does not stick to your hands. One way is to make sure your hands are always wet when handling sushi rice or. you can buy some no latex gloves (you can find them at walmart) and dab a little cooking oil on them and rub your palms together to spread it evenly, anyways thanks for all this.

theres no one right way to do it. it all comes down to your preference. start off with 1 cup vin, 1/3 cup sugar/ 1 tsp salt. then taste and adjust

you know i get this question a lot about how to make the rice less sticky but in fact the rice is suppose to be sticky so it will stick while you roll it. The solution to the problem would be how to apply the rice so that the rice does not stick to your hands. One way is to make sure your hands are always wet when handling sushi rice or. you can buy some no latex gloves (you can find them at walmart) and dab a little cooking oil on them and rub your palms together to spread it evenly. The sushi rice will not stick to the oiled gloves. I should incorporate this information in the post. Thank you for bringing it up.

Really nice, I've been doing it wrong for quite some time now, not that it didn't work, but my rice sometimes seemed a bit too sticky to the fingers but the key thing is that I did not wash the rice good enough probably...
