How to make Sushi Rice!
The proper way to making sushi rice is very important to making good sushi. How to make sushi rice is part of the fundamentals and if you don’t know that, you cannot go very far. I’ve seen a lot of videos on the web of how to make sushi rice and most of them aren’t very watcher friendly. They don’t show you exactly the right way nor step by step of what you should do.
I’m taking this website and heading towards a new direction. Every video will be detailed and very easy to follow.
Starting with this post, I will do my best to make sure every post is clear and to the point.
Here you go: How to make Sushi Rice
Ingredients will need:
- 4 cups of short grain rice
- 1 cup of Sushi Rice Vinegar
- Water
Tools you will need:
- Rice Cooker
- Hangiri
- Wooden Rice Spoon
- 2 Small Towels
Start off by placing 4 cups of rice into the rice cooker pot. Wash the rice by running cold water into the pot while rubbing the rice together and stirring the rice. (Rubbing too hard may break the grains.) Wash until the water is very cloudy and remove the water. Add more water into the pot and repeat until the water is clear.
Remove the water from the pot and add drinking water up till slightly past the rice level. Place your palm on top of the rice. Having the water level to about where your knuckles are is what you want when making sushi rice.
Place the pot into the rice cooker. Place your hand to the bottom of the pot and below the sushi rice. Give it a nice swirl to allow water to run between the sushi rice. If you don’t do this, you run the risk of getting parts of rice that are not fully cooked. Close the rice cooker and it cook.
When your sushi rice is about to be done, prepare your hangiri. Wet one towel, wring it into the hangiri and wipe all around the bottom and sides of the hangiri. Make sure its fully soaked with water but not soaked to the point where u see water running around. Soak it until the wood is not dry. Wipe your wooden rice spoon with the wet towel too.
When the sushi rice is done cooking, use your wet towel to take the pot out. Use your wooden spoon to stab the edge around the rice and pot to separate it. Do not scoop the rice out. Doing so will mush some of the rice together. Flip the pot over the hangiri and the entire block of rice should fall out.
Use your wooden spoon to move the rice to one side of the hangiri and pour the sushi rice vinegar on to your wooden spoon while evenly distributing the sushi rice vinegar onto the rice. Once that is done, scoop some rice and throw it towards the other side of the hangiri. Use your wooden spoon to slice back and forth to separate the rice. Do not stir. Just use your wrist while slicing back and forth. Every now and then use your wet towel to wipe the wooden spoon and the sides of the hangiri to keep it damp. The rice will stick to the wood if its dry. Repeat until all the rice has been sliced. The goal is to individualize each grain of rice.
Next, slicing in one direction, spread the rice even around the hangiri and let it set for about 5 minutes. When the 5 minutes is up, flip the rice over with the wooden spoon. Let it set for another 5 minutes and then your good to go. There you have it, how to make sushi rice.
Enjoy!

Well, I think the solution to the problem would be how to apply the rice so that the rice does not stick to your hands. One way is to make sure your hands are always wet when handling sushi rice or. you can buy some no latex gloves (you can find them at walmart) and dab a little cooking oil on them and rub your palms together to spread it evenly, anyways thanks for all this.

theres no one right way to do it. it all comes down to your preference. start off with 1 cup vin, 1/3 cup sugar/ 1 tsp salt. then taste and adjust

Really nice, I’ve been doing it wrong for quite some time now, not that it didn’t work, but my rice sometimes seemed a bit too sticky to the fingers but the key thing is that I did not wash the rice good enough probably…

you know i get this question a lot about how to make the rice less sticky but in fact the rice is suppose to be sticky so it will stick while you roll it. The solution to the problem would be how to apply the rice so that the rice does not stick to your hands. One way is to make sure your hands are always wet when handling sushi rice or. you can buy some no latex gloves (you can find them at walmart) and dab a little cooking oil on them and rub your palms together to spread it evenly. The sushi rice will not stick to the oiled gloves. I should incorporate this information in the post. Thank you for bringing it up.
