The Rainbow Roll is assorted fish and avocados layered on top of a California Roll.  The fish selected to be on top of the roll is usually up to the sushi chef unless a customer specifically asks if the sushi chef can  accommodate their preferences.  The sushi chef will be happy to do so.  Sometimes the owner of the restaurant will be happy to charge you an extra two dollars also.  So if you want it done your way with out the miscellaneous fees, you got to do it yourself.  Now making rainbow rolls for yourself isn’t all that cost effective from having to buy a variety of different fish.  What you should do is gather a few friends that are willing to share the experience as well as the costs too.  It will be a fun experience and good eats. The name Rainbow Roll derives from the multiple colors of ingredients visible over the top. Tuna is red, Salmon is orange, Yellowtail is yellow, Snapper is White, and Avocado is green. Looks like a rainbow with all those connecting colors.

What you will need to make a Rainbow Roll:

Sushi Tools-

  • Sushi Rolling Mat or Bamboo Mat
  • Plastic Wrap
  • Knife
  • Cutting Board

Sushi Ingredients- (to make 1 Rainbow Roll)

  • Sushi Rice
  • Toasted Sesame Seeds
  • 1/2 Sheet of Nori (seaweed)
  • 3 different nigiri slices of fish (Tuna, Salmon, Snapper, Yellowtail, etc.)
  • 3   slice of  Avocado (slice size-  1/16th of an Avocado)
  • 1 imitation crab stick
  • A few pieces of thinly sliced cucumber

In order to make the Rainbow Roll you first must make a California Roll.

Grab a palm full of sushi rice and spread it onto the 1/2 sheet of nori (seaweed).  Add toasted sesame seeds on the rice.

Place the rice patty rice side down onto the rolling mat.  Split the crab stick in half and place it across the middle of the nori.  Now add 2 slices of avocado and the few pieces of cucumber.  Try not to use too much ingredients or the roll won’t be able to close.

Now holding both the edge of the patty and bamboo mat.  Roll forward till it folds over the ingredients and touches down onto the nori.  Squeeze, to tighten the space between the nori and ingredients, lift up the bamboo mat edge and roll forward until you’ve closed the roll.

Use the Rolling Mat to mold the roll into a circular square shape and pat the sides to close the edges.

Now you have a California Roll.

Next step would be to add your layers of fish and avocados.

Place 3 fishes diagonally and spaced out from one at the left end, one in the middle, and on at the right end.

With your remaining 1/16th slice of an avocado, slice that into 4 very thin pieces and layer 2 in between each fish.  If this is too hard its okay to use thicker slices of avocado.

Now that everything is placed on top, you need to cut it into 8 pieces but it will be too hard because the ingredients will move around.

Place plastic wrap over the entire roll and mold it down with the rolling mat.

Now you can cut the roll into 8 pieces without worrying about ingredients falling off.

When you’re done cutting, mold it again with the rolling mat and then remove the plastic wrap.

Place the pieces onto a plate and sprinkle toasted sesame seeds on top of the roll.

And that is how you make a Rainbow Roll.

This is just one version of the Rainbow Roll. If you prefer more fish or ingredients, feel free to add whatever you wish on top. To create more space, align the ingredients vertically instead of horizontally.
