		<description>I have finally found a website I love!  My teenager (17 years old) loves sushi and gets cravings for it where he pesters me about it until I go buy him some.  There is a really great sushi place around the corner but since he likes is so much, it will be great to make him some at home.  Now I can learn to make it so he can enjoy it more often.  Getting the ingredients like tobiko and good quality fish for it might be a challenge, but worth it!  Watching the videos is more entertaining than watching television.  I give you another 5 star rating.</description>

I am going to try 75% of all your recipes as I am very limited to what I can get in Mexico as far as sauces.  I would like to know if there is a way to make the kewpie mayo and spicy mayo. 		<description>When buying filets of fish from a store, always buy center cut pieces. This is the widest section of most fish excluding tuna. The reason you want the thickest filet possible is when you cut for nigiri, you will not have to slice it at such a great angle. Salmon and yellowtail and all fish with the same structure can simply be sliced very thin on an angle. You will buy a square filet and simply start at one CORNER of the piece and carve thin slices on an angle. This will give you thin rectangular Nigiri which will mold to your rice quite well. For Tuna, the optimum way to slice Nigiri is to have the Tuna &quot;blocked off&quot;. Blocking refers to a method different than a store bought &quot;Tuna Steak&quot;. To make a proper sushi block for Nigiri dont buy a Steak, instead ask for a 3 inch long &quot;Steak&quot; and cut it into four pieces longways. This will give you 4 pieces about the shape of a pack of cigarettes. Begin slicing vertically against the grain and wallah! perfect Tuna Nigiri. The same can be used for Toro. To cut tuna for rolls simply cut 1 of your 4 pieces into 4 smaller pieces and arrange on your seaweed. Enjoy!</description>
